Acrylamide is recognised by the European Food Safety Authority as a potential cancer risk in food.

The European Union (EU), Commission Regulation (EU) 2017/2158 establishes mandatory mitigation measures and sets benchmark levels for specific food categories. In Great Britain (GB), this regulation continues to apply as assimilated (retained) law following the UK’s exit from the EU; food businesses in England, Scotland and Wales are required to implement proportionate mitigation measures and maintain acrylamide levels as low as reasonably achievable.
